So, there you go, Dear Reader, a little inside scoop on how my recipe/blogger life sometimes works. The only thing I did differently was to switch out the chicken for the pork loin chops. I had taken the time to follow the recipe exactly as it was sent to me. In this case though, starting over wasn’t needed. I’ve had it happen where I’ll try a new recipe, set everything up, drag out my camera and tripod, blah, blah, blah – only to have the recipe taste horrible. I can’t necessarily try to take pictures of the pork loin chops after I’ve eaten them. So, before I dig in to the recipe, I need to set up a table setting and take some photos. Ha! Being a food blogger, sometimes, I get to experiment with recipes that I’ve never made before. She gave her two thumbs up and I knew I had a winner. Once the dish came out of the oven, I quickly took a picture and sent it to my ex mother-in-law. You can do this up to 24 hours ahead of time - if leaving longer than 1 hour, cover and refrigerate, bring back out about an hour before cooking. Salt and pepper each side generously, and set aside. I could seriously just soak that sauce up into some good crusty bread and make a very satisfying meal! If needed, pound the chops to an even thickness. The colour was a beautiful, bright red – that sauce is perfectly fine on it’s own, to be completely honest. The sauce thickened and adhered to the chops. The pork loin chops keep their shape very well. The result, as you can see, was beautiful. Then, I sat back and worked on my crochet projects until my kitchen cooking timer scared the hell out of me. I whisked up the sauce, poured it over, and threw it in the oven. So, with a nice pork loin ready to go, I sliced it into 4 thick chops – about an inch thick. Her response was simple and just what I needed to hear to get started – “I can’t see why not!” Transform this American baked bean stew into a filling no-fuss meal with pork loin steaks and shredded ham hock - it saves on the washing up, too.
